This is a simple, buttery cake with a hint of almond! Makes an awesome birthday cake! *Approved by the pickiest of children!*

Dry Ingredients:
1 3/4 cup Hodgson Mill all purpose flour and
1/4 cup corn starch
1 1/3 cup Domino sugar
1/4 teaspoon salt
2 teaspoon baking powder

Wet ingredients:
1 cup plus 2 tablespoon milk (I use 1% milk) at room temperature or warmed slightly (10 seconds in microwave)
1 stick unsalted butter (do not substitute) softened
5 egg whites at room temperature
2 teaspoon vanilla extract
1/4 teaspoon almond extract

Step 1:
Preheat oven to 375 degrees F. Butter and flour a 9x9" baking pan.

Step 2:
In large mixing bowl, mix all dry ingredients. In separate medium mixing bowl, mix all wet ingredients with a whisk until well blended and appears slightly bubbly.

Step 3:
Pour wet ingredients into large mixing bowl with dry ingredients and stir for approximately 3 minutes or until well mixed.

Step 4:
Pour cake batter into pan and bake at 375 degrees F for 33 to 35 minutes. Do not open the oven while cake is cooking. If you must look (I can't help myself!), turn the oven light on so that you are able to keep checking through the glass.

Step 5:
Cake is done when toothpick comes out clean when poked into the cake (no wet batter). Let cool for approximately 1 hour. Frost with your favorite icing/frosting!
