This applesauce cake is very moist and the flavor is simple, yet mouthwatering!
Dry Ingredients:
1 3/4 cup Hodgson Mill all purpose flour and
1/4 cup corn starch
1 1/2 cup Domino sugar
1/4 teaspoon salt
2 teaspoon baking powder
Wet ingredients:
1 cup milk (I use 1% milk)
3/4 cup Mussleman's natural unsweetened applesauce
4 large eggs
2 teaspoon vanilla extract
Step 1:
Preheat oven to 375 degrees F. Butter and flour a 9x13" pan or 2 round 8" pans.

Step 2:
In large mixing bowl, mix all dry ingredients. In separate medium mixing bowl, mix all wet ingredients with a whisk until well blended and appears slightly bubbly.

Step 3:
Pour wet ingredients into large mixing bowl with dry ingredients and stir for approximately 3 minutes or until well mixed.
Step 4:
Pour cake batter into pan/s and bake at 375 degrees F for 27-29 minutes. Do not open the oven while cake is cooking. If you must look (I can't help myself!), turn the oven light on so that you are able to keep checking through the glass.
Step 5:
Cake is done when toothpick comes out clean when poked into the cake (no wet batter). Let cool for approximately 1 hour. I love to top with a dusting of powdered sugar.
